My name is Priscilla Pierce, I have over 20 years experience in baking with no
sugar added desserts. My father, mother, husband, mother-in-law, many aunts and cousins are all diabetics.
The challenge of finding low carbohydrate desserts with a sweet tooth husband has inspired me to create these
cookbooks.
My Italian mother, always cooked the "old way" and is an excellent baker. I had to come
up with recipes that would meet with her standards, but with no sugar added. And believe you me this was no easy
task. Italian women are really picky when it comes to cooking or baking and my mother was no exception, but
it was worth the effort. With multiple taste testing with various people my desserts came just as good or better
as conventionally made desserts with sugar.
My cookbook is different from other diabetic cookbooks, because: I have collaborated the recipes and
ingredients closely with an Internal Medicine Physician who has a large practrice of diabetic patients. All recipes
contain nutritional information and offer a wide variety of recipes.
